When the temperature climbs, dessert is the one part of the kitchen I never want to skip, even if it means avoiding the oven entirely. I’ve rounded up every dessert I reach for all summer long, from fresh fruit crisps to no-churn ice cream to the no-bake pies that keep my kitchen cool.
Whether you’re hosting a backyard cookout, need something to bring to the lake house, or just want a cool bite after dinner on the porch, this list of the best summer desserts has you covered. Grab a bowl and let’s get into it!

Summer Without Dessert? Hard Pass.
I’ve never met a summer evening that didn’t end better with a dessert in my hand. And as a dessert person, summer is one of my favorite seasons to make dessert. Fresh summer produce makes everything SO much better!
Some of my best memories are built around these exact recipes. Homemade peach ice cream cranking away while my husband is grilling our dinner, a lemon icebox pie chilling for a potluck, prepping deviled strawberries the morning of a Fourth of July party. Summer desserts aren’t just food to me; they’re the whole occasion.

Most of what’s below comes together with a mixing bowl, the fridge or freezer, and maybe fifteen minutes of hands-on time, which means more time out on the patio and less time inside.

Why You’ll Love These Summer Treats
- Minimal oven time. Most of these summer dessert recipes skip the oven entirely or only need it briefly, so your kitchen (and your air conditioning bill) stays cool.
- Built for fresh fruit. Peaches, strawberries, blueberries, lemons, this is the season to use them, and these recipes let that fresh fruit flavor shine.
- Crowd-ready. Whether it’s a potluck, a pool party, or a Fourth of July cookout, these are the recipes people ask you to bring back next year.
- Make-ahead friendly. Many of these can be made a day (or more) in advance, so you’ll have less scrambling on the day of your get-together.
- A flavor for every craving. From rich chocolate to bright citrus to classic strawberry shortcake, there’s something here no matter what you’re in the mood for!

Homemade Fresh Strawberry Ice Cream

Churned to gelato-level creaminess and packed with fresh berries, this is the strawberry scoop I make on repeat all season long.

Simple, kid-approved, and endlessly customizable, these are a warm-afternoon staple in my freezer. Swap in whatever fruit is looking good at the market and you’ve basically got a new flavor every week.
Old Fashioned Homemade Vanilla Ice Cream

Rich and from-scratch, this is the classic base that pretty much every other ice cream craving starts with. Once you’ve made vanilla this good, the tub in your freezer just won’t cut it anymore.
Homemade Chocolate Ice Cream

Deep, fudgy, and unbelievably creamy, it’ll make you wonder why you ever bought chocolate ice cream at the store.
Cookies and Cream Ice Cream

Loaded with chunks of chocolate sandwich cookies, it’s a guaranteed hit with kids and adults alike. My boys have been known to fight over who gets the last Oreo chunk in the container.
Easy Moose Tracks Ice Cream

Vanilla swirled with fudge and peanut butter cups, this copycat flavor holds its own against the store-bought version, no ice cream maker required.
S’mores Ice Cream

Toasted marshmallow, chocolate, and graham cracker crunch turn campfire flavor into a scoop. It’s basically camping, minus the bug spray.

Healthier Fried Ice Cream Cake

Watermelon Sorbet

No ice cream maker required, just a few simple ingredients for this dairy-free watermelon sorbet that is sure to cool you off on a hot summer day!
No-Bake Desserts
When it’s too hot to think about turning on the oven, these are the recipes I reach for. A mixing bowl and a few hours in the fridge is all most of them ask. For even more no-bake recipes, check out my 60+ No Bake Dessert Recipes!
No-Bake Lemon Icebox Pie

Cool, citrusy, and impossibly smooth, this is the dessert equivalent of a summer breeze. It’s pie without ever turning on the oven, which honestly might be my favorite kind of pie.
Magnolia Banana Pudding

My copycat of the famous New York bakery favorite, layered and creamy, and gone the moment it hits the table. I’ve brought this to more potlucks than I can count and it’s never once come home in the same bowl.
Strawberry Banana Pudding

Fresh strawberries take classic banana pudding up a notch with a burst of color and fruit flavor. It’s the version I make when I want people to ask for the recipe before they’ve even finished their bowl.
Oreo Dessert Pudding

Layers of Oreo crust, cream cheese, and pudding make this potluck favorite as fun to make as it is to eat.
Oreo Peanut Butter Pie

Peanut butter and chocolate were made for each other, and this Oreo crust proves it. One bite and you’ll understand why this pairing has stood the test of time.
Traditional Tiramisu

Made the authentic Italian way with espresso-soaked ladyfingers and a cloud-like mascarpone filling, this one tastes like a trip to Rome without ever leaving your kitchen.
Deviled Strawberries

A playful twist on strawberries and cream, these bite-sized treats are as pretty on a platter as they are delicious. Five minutes, no oven, no mixer, just a piping bag and a whole lot of “ooh.”
Edible Cookie Dough

Made safe to eat straight from the bowl, this is the dough I keep stashed in the fridge for emergencies. And yes, “cookie dough emergency” is absolutely a real thing in my house.
Rice Krispie Treats

Browning the butter takes this childhood favorite from good to unforgettable, with a nutty, caramel-like depth in every bite. Trust me, you’ll never go back to the plain version again.
Strawberry Icebox Cake

Layers of cookies and whipped cream soften overnight into something that tastes bakery-made. It’s proof that patience (and a fridge) can do all the hard work for you.
Chocolate Fruit Dip

A no-bake cheesecake filling ready for dipping! Rich and chocolatey, this dip turns a simple fruit tray into the thing everyone reaches for twice. Don’t be surprised when the fruit disappears way faster than usual.
No-Bake Cheesecakes
Tiramisu Cheesecake

Two beloved desserts collide here, coffee-soaked layers meet classic cheesecake for something truly special. It sounds fancy, but it’s every bit as easy as a regular no-bake cheesecake.
No Bake Blueberry Cheesecake

A creamy no-bake filling topped with a fresh blueberry layer, perfect for peak berry season. It’s the kind of dessert that makes you look a lot more impressive than the effort actually required.
No-Bake Strawberry Cheesecake

This no-bake strawberry cheesecake is a little lighter, so you feel less guilty about devouring every bite on your plate!

Buttery biscuits, sweetened strawberries, and a mound of whipped cream, the classic done right. There’s a reason this one never goes out of style.

Easy Strawberry Crumble

A buttery oat topping over sweet, jammy strawberries, simple enough for a weeknight treat but good enough for company too.
Strawberry Rhubarb Crisp

Tart rhubarb and sweet strawberries meet a crisp, crumbly topping in this classic seasonal pairing. Grab the rhubarb while you still can, it’s gone before you know it!
Blueberry Crumble Cake

A tender cake studded with blueberries and finished with a sweet, crumbly streusel top. It works just as well for breakfast as it does for dessert, not that I’m judging either way.
Lemon Dump Cake

About as low-effort as dessert gets, just a few ingredients “dumped” and baked into a bright, gooey cake. Minimal effort, maximum payoff, my favorite kind of recipe. Try this blueberry lemon version too!
Strawberry Pizza

Not only easy, but refreshing, beautiful and delicious too. Sugar cookie crust, topped with a creamy base, smothered in sliced fresh strawberries and topped with fluffy whipped cream. Nothing better than this!
Key Lime Pie

Tart, creamy, and set in a graham crust, this award-winning pie is a warm-weather staple in my house. It’s the recipe I get asked for most every summer, hands down.
Fruit Pizza Cookies

Individual sugar cookies get topped with sweet cream cheese frosting and a rainbow of fresh fruit, always a showstopper. They’re practically begging to be the centerpiece of your next summer gathering.

Graham cookie bars, sandwiching a creamy marshmallow filling swirl along with chocolate chips for the ultimate s’mores bar!
How To Store These Summer Dessert Ideas
Storage depends on the dessert, so here’s how I keep each type tasting fresh (when it actually lasts that long!).
Frozen treats & ice cream
- Store homemade ice cream in an airtight, freezer-safe container with a piece of plastic wrap pressed directly on the surface to prevent ice crystals.
- Ice cream cakes and sandwiches should stay tightly wrapped in the freezer and are best enjoyed within 1-2 weeks for the best texture.
- Let homemade ice cream sit out for 5-10 minutes before scooping, it firms up more than store-bought since there are no stabilizers.
No-bake desserts
- Keep pies, puddings, and icebox cakes covered in the fridge, most will hold up well for 3-4 days.
- Anything with whipped cream or cream cheese should always be refrigerated, never left out at room temperature for more than an hour or two, especially in summer heat.
- Edible cookie dough keeps in the fridge for about a week, or freeze individual scoops for a longer-lasting stash.
Fresh fruit bakes & bars
- Cobblers, crisps, and crumbles can sit covered at room temperature for a day, then move to the fridge for up to 4-5 days.
- Bars and squares (like lemon squares or crumb bars) store best in an airtight container in the fridge, they hold their texture much better chilled.
- Cookies, like s’mores cookies, keep well in an airtight container at room temperature for up to 3 days, or freeze the baked cookies (or the dough) for up to 3 months.
A general rule of thumb: if it has dairy, cream cheese, custard, or fresh fruit mixed in, it belongs in the fridge. If it’s a sturdier baked good, room temperature is usually fine for a day or two before it needs to move to the fridge.
Summer is short. The peaches won’t last, the rhubarb disappears before you blink, and somehow it’s Labor Day before you’ve made half the things you planned. So pick one recipe from this list this week, just one, and make it. Your porch, your people, and that bowl of ice cream will thank you. And if you make something, I’d love to hear about it in the comments below!
