After indulging over the holidays in all of the scrumptious foods — when January rolls around, I feel like I’m rolling around a bit too!
So it’s back to thinking a little more about what I’m fueling my body with — I’ve got a few healthy recipes for you this week along with a treat that is perfect for the weekend. Because it’s about balance right?
I’m passed the stage where I go all in for the latest fad diet, I mean when you’ve been dieting for 40+ years, you kinda get to a point of being “done” and embracing your muffin top.
My friend Eliza and I were chatting this week (while eating a salad mind you), we laughed about how much harder it is to take any weight off when you are over 50 and how we are embracing stretchy pants, trying to be comfortable in our own skin — finding balance in what we enjoy. Who’s with me?
However; that being said, I have a few delicious and healthy recipes for you, along with a yummy sweet treat, that will save you a few pennies this January.

Weekly Inspiration | I Can Only Imagine
A week full of emotions, I just heard an old friend passed away at the end of October, our dear friend Judy is hugging Jesus now after her valiant, though short fight with ALS and my mom just shared that a life-long friend that we grew up with passed away. I am so grateful all three are dancing on streets of gold, no more pain, no more sorrow — an no longer having to imagine what it’s like to be in the arms of Jesus.
So this fantastic song, while an oldie, is so so very good and speaks truth. I Can Only Imagine by Mercy Me.

Hi. I don’t often post on sites like yours but it is a new year so I thought I would let you know how much I appreciate your blog and your faith based outlook on life. There is so much negativity and horror in the world right now that reading your posts helps me realize there is still hope in the one who can save us all. I also print off many of your recipes. Now I just have to get organized (and motivated) to make them. I also send my sympathy re: your friends loss. We too lost a friend to ALS this year. She was a wonderful lady, wife, mother to 3 and grandmother to 6 who loved Jesus and is now singing in His heavenly choir. ALS is a terrible disease which robs the victim of everything except their mind so they always know what is happening. Such a sad thing! Blessings to you and your family.

I’m so sorry for your losses. My mom died of ALS, it’s awful awful awful! We played “I can only imagine” at her funeral. I’m amazed at how popular that song STILL is on Christian radio, it was newer when she passed 21 years ago.
