November is here, and in our house that means one thing. Soup’s on! This week is all about big pots of something warm. A slow cooker beef stew that makes the whole house smell amazing. My brand-new Chicken Salad Chick copycat wild rice soup. Zuppa Toscana and broccoli cheddar, plus a cheesy chili mac casserole for the night you want a fork instead of a spoon.
Most of these taste even better the next day, and almost all of them freeze. Make a little extra and tuck it away for a crazy night. Then finish the week with my new pumpkin poke cake. Twice the pumpkin, and you make it the day before!

This Week’s Kitchen Rhythm
Your Smart Cooky Club plan for the week
- Set it and forget it: Slow Cooker Beef Stew
Load the crockpot in the morning and walk back in to dinner. Brown the beef first if you have ten extra minutes; the gravy is worth it. - Copycat night: Creamy Chicken and Wild Rice Soup
Grab a rotisserie chicken and it all comes together in one pot. It thickens overnight, so the leftovers are even better. - 30-minute rescue: Zuppa Toscana
Sausage, potatoes, greens and a splash of cream. Done before anyone asks what is for dinner twice. - Panera at home: Broccoli Cheddar Soup
Real cheese, no Velveeta, and a loaf of crusty bread for dunking. - Flexible extras: Chili Mac Casserole + Pumpkin Poke Cake
Chili mac for a no-soup night or packed lunches, and a dessert that has to be made the day before. Twist my arm!
A simple plan to help your week run a little smoother.
This Week’s Kitchen MVP: Souper Cubes. Four soups and a casserole means leftovers, and that’s the whole point! Ladle the extra stew or soup into the 2-cup trays, freeze, then pop out the blocks and stash them in a freezer bag. Future you gets dinner in minutes.
Don’t have them yet? These are the 2-cup Souper Cubes I use all winter long. They make the easiest single-serve lunches too.
5 Steps to a Stress-Free Week of Meals
Start by printing your grocery list, then let’s make this week feel a whole lot easier.
Remember the suggested sides are not included on the grocery list, so be sure to add those ingredients.
- Plan Your Week, Your Way: There’s no right or wrong order here. Cook the meals as listed or mix and match your favorites.
- Access Your Recipes Anytime: Print the recipe cards or pull them up on your device. Everything you need is right at your fingertips.
- Shop Smart: Check your fridge and pantry first. Cross off what you already have and add anything else you need.
- Make It Yours: Use the tips below to adjust for dietary needs, preferences, or portion sizes.
- Enjoy the Process: This is about simplifying your week and gathering around the table with good food and the people you love.
You’re building a kitchen rhythm that serves your home well, one simple meal at a time.
Dinner 1: Slow Cooker Beef Stew
Prep-Ahead Tips: Season the beef and chop the onions, carrots, and garlic the night before, so the morning is just dump-and-go. Browning the beef is optional, but it gives you a deeper, darker gravy. If you freeze, just know that the potatoes will change slightly in texture, nothing big, just note that.
DIETARY TWEAKS
- Gluten-Free: Thicken with gluten-free flour, or stir in a slurry of 3 tablespoons cornstarch and ¼ cup cold water for the last 30 minutes. Double-check the labels on your Worcestershire and broth.
- Dairy-Free: Brown the onions in olive oil, then skip the butter at the end or use a plant-based butter.
- Low-Carb: Swap the potatoes for cubed rutabaga and trade some of the carrots for celery. Skip the flour and whisk in a pinch of xanthan gum to thicken.
Cooking for Two? Use the slider on the recipe card to halve it, and start checking the beef a little early. Or make the whole pot and freeze individual portions. Leftover stew also turns into a quick Skillet Shepherd’s Pie.
Suggested Sides: Bread for dunking is non-negotiable in our house! Try Cheddar Bay Biscuits, Easy 4 Ingredient Beer Bread, or my No Yeast Bread. Add a Steakhouse Wedge Salad for something crisp.
Dinner 2: Creamy Chicken and Wild Rice Soup
Prep-Ahead Tips: Pick up a rotisserie chicken and pull the meat ahead of time, it’s easiest to pull when it’s still warm. Dice the onion, carrots and celery the night before. This soup thickens as it sits, so it’s even better on day two, but if it gets too thick, just add a splash of chicken broth. Because it’s thickened with a roux, it freezes better than most creamy soups, too.
DIETARY TWEAKS
- Gluten-Free: Use a cup-for-cup gluten-free flour blend in the roux and a plain, unseasoned wild rice blend. Some seasoned blends sneak in gluten.
- Dairy-Free: Use olive oil and a plant-based butter, then swap the milk and cream for unsweetened oat milk and a little coconut cream. I haven’t tested this one yet, so let me know if you try it!
- Vegetarian: Use vegetable broth and mushroom-based bouillon, and stir in white beans or firm tofu instead of the chicken right before serving.
Cooking for Two? Use the slider to halve it, or make the full pot and freeze individual portions. Reheat it gently over low heat with a splash of broth so the dairy stays smooth.
Suggested Sides: A loaf of French Bread or Sweet Buttermilk Cornbread, plus Chicken Salad Chick Grape Salad or Broccoli Salad. For the full restaurant experience, add crackers and my Pimento Cheese.
Dinner 3: Zuppa Toscana
Prep-Ahead Tips: Brown the sausage and crisp the bacon a day ahead, then refrigerate them separately. The soup takes about 30 minutes. Freezing some? Scoop that portion out before the greens and cream go in. Keep the bacon in its own container to keep it crisp. You can even pop it into a hot pan to rewarm and re-crisp it for a minute or two.
DIETARY TWEAKS
- Gluten-Free: Naturally gluten-free, as long as your sausage and broth are. Check the labels.
- Dairy-Free: Swap the heavy cream for coconut cream, use olive oil instead of butter, and skip the Parmesan. I’ve made it this way for a girlfriend, and it’s delicious.
- Low-Carb: Use diced rutabaga or cauliflower instead of potatoes. Rutabaga is my pick; nobody can tell the difference!
Cooking for Two? Use the slider on the recipe card to halve it. Or make the full batch, pull out half before adding the greens and cream, and freeze it for another night.
Suggested Sides: This one is a meal in a bowl, so keep it simple. Some Rosemary Focaccia, Rustic Italian Bread, or Cheesy Garlic Bread for dunking, and a crisp Steakhouse Wedge Salad.
Dinner 4: Broccoli Cheddar Soup
Prep-Ahead Tips: Grate the cheese and carrots ahead of time. Freshly grated cheese melts much more smoothly than pre-shredded. When you stir in the cheese, keep the heat low so the soup stays silky, not grainy.
DIETARY TWEAKS
- Gluten-Free: Use gluten-free all-purpose flour in the roux and freshly grated cheese, since some pre-shredded cheese has anti-caking agents.
- Dairy-Free: Use a good dairy-free cheddar shred or nutritional yeast, swap the half-and-half for a dairy-free milk or cream, and use olive oil or vegan butter.
- Vegetarian: Use vegetable broth. A splash of soy sauce or a spoonful of nutritional yeast adds back that savory depth.
Cooking for Two? Use the slider on the recipe card. One reader made just 2 servings for herself and said it was even better than Panera! Leftovers keep 3 to 4 days in the fridge.
Suggested Sides: Go full Panera and serve it in a sourdough bread bowl. Or make it a soup-and-sandwich night with Ham and Cheese Sliders or a Caprese BLT Sandwich. An Italian Chopped Salad works great too.
Lunch or Dinner: Chili Mac Casserole
Prep-Ahead Tips: Assemble the whole casserole, top it with cheese, cool it, then cover and refrigerate a day ahead. Or freeze it and bake from frozen at 350°F for 60 to 75 minutes, uncovering for the last 10. Cook the macaroni just to al dente, so it doesn’t turn mushy.
DIETARY TWEAKS
- Gluten-Free: Use your favorite gluten-free elbow macaroni.
- Dairy-Free: Use a plant-based shredded cheese.
- Low-Carb: Swap in a low-carb, high-protein pasta. I love Pete’s brand.
Cooking for Two? This makes 8 to 10 servings. Divide it between two smaller baking dishes, bake one, and freeze the other for a busy night. It’s what I do for us!
Serving Suggestions: Top it with sour cream and sliced green onions. Add a wedge of Sweet Buttermilk Cornbread and a Mexican Fruit Salad on the side.
Dessert: Pumpkin Poke Cake
Prep-Ahead Tips: This one is meant to be made ahead! Bake and soak the cake the day before, cover it, and refrigerate it overnight. Add the whipped cream and toffee right before serving. Want to get way ahead? Freeze the plain baked cake before poking for up to 2 months.
DIETARY TWEAKS
- Gluten-Free: Use a gluten-free yellow cake mix with 4 teaspoons of pumpkin pie spice total, and let the batter rest 10 minutes before baking. Grease the pan with a plain nonstick spray (not one with flour) and check the label on your toffee bits.
- Dairy-Free: Use coconut sweetened condensed milk and coconut whipped cream, and swap the toffee bits for toasted pecans. I haven’t tested this one yet, so let me know if you try it!
Cooking for Two? This makes 12 servings. Bake the full cake, cut it in half, and freeze one half plain (before poking). Thaw it overnight, then soak and top it for a second round later.
Serving Suggestions: Drizzle it with my Bourbon Caramel Sauce and a pinch of flaky salt. Holding it a few days? Top it with Stabilized Whipped Cream so it doesn’t weep. Still craving pumpkin? Try my Pumpkin Cheesecake Bars next.
