In the here and now | Real-life stories
Since I last wrote you, my husband and I have been to The Bahamas! He made President’s Club with his company and we had an all-expenses paid trip to a beautiful resort in Nassau.
We mostly stayed on the property, because there were numerous pool right at the ocean, a beautiful pier, and a boardwalk.
It was so good for my soul to spend time in the ocean, and what an ocean down there! Our first time in the Caribbean was spectacular. It also conveniently happened over my husband’s bday and our anniversary — 23 years, and I love him more than ever! (years married that is! not the age of my hubby 😉 )
We enjoyed a catamaran and snorkel trip, unfortunately, there was a lot of wind and chop, but it was still beautiful. Check out Gilligan’s island below!
The below pictures are from our last night, we enjoyed a romantic dinner in town at Sapodilla Resort, a Bahamian fusion cuisine. What a treat! We loved our waiter, Lowell, who was so kind, endearing, and professional. We fell in love with the island and the people!

Mincemeat is my favorite ???? I am lucky enough to have my Mother in Law’s recipe from about 80 years ago. You have to make a trip to your local butcher to get some of the needed ingredients such as beef neck and suet. It has enough alcohol (bourbon) that it stays soft in the freezer! Yum!!
Kathleen Pope
I have never had mincemeat. Itโs my step dadโs favorite too!!
