- Cinnamon | Cinnamon is an optional ingredient, but it adds great flavors to the recipe.
- Salt | I use kosher salt in my baking unless otherwise noted.
- Sugar | I use all-natural cane sugar – but you can use regular white sugar.
- Eggs | Use large eggs here, brought to room temperature.
- Oil | Any vegetable oil will work– I prefer avocado or melted coconut oil; note that when using coconut oil it may give it a coconut flavor.
- Bananas | Fresh banana flavor with mashed over-ripe bananas. The more overripe bananas the sweeter your banana bundt cake will be. Black or brown bananas are fine if they are not rotten or moldy.
- Creme Fraiche | Add richness with creme Fraiche or use sour cream or plain Greek yogurt.

How to Make This Banana Bundt Cake Recipe
Step 1 | Prep and combine dry ingredients
Start by preheating the oven to 325° F (165° C) and spraying a 10 or 12-cup bundt pan with baking release spray. Or, you can brush the pan with thoroughly with soft butter and dust it with flour. Use a well greased bundt pan; this will help avoid sticking when inverting the bundt cake.
Combine the flour mixture in a medium bowl, whisking the flour, baking soda, cinnamon, and salt. Then, set it aside. If adding walnuts and/or chocolate chips, remove a tablespoon or so of the flour and toss the nuts/chocolate chips in the flour mixture and set aside.
Step 2 | Combine wet ingredients
Next, in a large bowl of a stand mixer, or a large mixing bowl using a hand mixer; add the eggs and the sugar and beat with the paddle attachment on medium-high speed for about 6-8 minutes. Don’t shortcut this process; this provides air to the batter.
Fresh Tips
- Combine the eggs and sugar for a little longer if you’re using natural cane sugar.
Then, slowly pour in the oil. It should take one minute to drizzle in while the mixer is on medium speed.
Add the mashed bananas, creme fraiche, and vanilla extract.
Step 3 | Add flour mixture to wet mixture
Now, slowly fold your flour mixture into the wet batter; do not mix – that will deflate it. Also, add the flour-coated walnuts and chocolate chips, if desired.
Then, pour the batter into the bundt pan, tapping it a few times on a cutting board to release the air bubbles.
Step 4 | Bake and cool
Bake the bundt cake for about 65-75 minutes. Check the doneness by inserting a skewer or cake tester in the center of the cake – If it comes out clean or with a few moist crumbs, it is finished baking.
Next, cool the cake in the pan on a wire rack for 10 minutes. Then, invert it onto the cooling rack to remove the bundt pan and let the cake cool completely.

Step 5 | Glaze and garnish (Optional)
If desired, glaze the cake and sprinkle the top with crunchy chopped walnuts.
How to Make Brown Butter Glaze
First, melt butter to a small saucepan over medium-low heat. Keep in mind that it will snap, sizzle, and pop – continue to swirl it around every once in a while. When it starts to foam, let it sit on low heat until the foaming subsides, giving it a swirl now and again. Now, the butter should have a nutty aroma and a caramel color. So, remove it from the heat and cool it for a few minutes.
Next, whisk in the powdered sugar into the browned butter, adding water (milk or cream) to a mixing bowl. Sprinkle in a pinch of salt and whisk until it is smooth and thickened. Check out my post on how to make brown butter glaze.
Then, drizzle the glaze on your bundt cake with a spoon or pour it into a piping bag to pipe it onto the cake.

High Altitude Banana Bread Bundt Cake
If you’re baking at a high altitude, make the following adjustments for the best results: high altitude is typically 3000 feet and higher.
- Increase flour to 3 ¼ cups
- Reduce sugar to 1 ½ cups
- Reduce baking soda to 1 ½ teaspoons
- Bake at 350° F (175° C), checking at about 60 minutes

Gluten-Free Banana Bundt Cake
To make this bundt cake gluten-free, replace the all-purpose flour with 1 ½ cups almond flour and 1¾ cups gluten-free all-purpose flour. Be sure to double-check the rest of your ingredients to make sure they are gluten-free. As the gluten-free cake bakes, check it a little earlier to avoid overbaking.
Banana Nut Bread Bundt Cake
Add chopped walnuts to the bundt cake batter for added texture and flavor. But first, lightly coat the chopped nuts with a reserved tablespoon of flour mixture. This will help them not sink into the batter, being evenly distributed instead.
Chocolate Chip Banana Bundt Cake
Add chocolate chips, banana bundt cake! Before adding the semi-sweet chocolate chips to the cake batter, toss them in reserved flour mixture until lightly coated. This helps the chocolate chips float in the batter rather than sink to the bottom.
Sugar-Free Banana Bread Bundt Cake (Low-Carb)
If you are trying to cut out sugar due to diabetes or eating a low-carb diet, replace the sugar with a golden sugar substitute for the cake, I like this brand the best. Then use 2 cups almond flour and 1 cup coconut flour in place of the regular flour.

- Sugar: The granulated sugar can be swapped with alternatives like coconut or brown sugar for a slightly different flavor profile.
- Eggs: If you want an egg-free option, consider using applesauce, yogurt, or commercial egg replacers to maintain moisture and binding.

The flavor and ingredients of bundt cakes and regular cakes are similar but not the same. Bundt cakes require more moisture and use a deep, round pan with the center cut out, much like the shape of a donut. They are also more commonly glazed instead of frosted or iced.
A bundt pan is deeper, and the batter is more dense, resulting in a longer baking time.
Using a heavy-duty quality bundt pan will make all the difference in your release. Plus, brushing the pan with butter or spraying it with cake release helps significantly when removing the cake from the pan. However, if you still have difficulty, run a thin knife or spatula along the sides between the pan and the cake to loosen it some.
To avoid overflowing, don’t fill the pan any more than ⅔ – ¾ from the top.

Refrigerate or Keep on the Countertop? Store the cooled cake in an airtight container in the fridge for up to a few days. However, keeping it at room temperature is best because the cold usually dries it out.

How to freeze leftover banana bundt cake: Freeze individual slices wrapped well in plastic wrap, then place in a freezer bag, then the next time you’re craving bundt cake banana bread, it thaws quickly. Plus, the cake will thaw much quicker! If you would like to freeze the whole cake, make sure that it’s cooled completely, wrap it well in plastic wrap and then aluminum foil, and freeze up to 3 months.

Banana Bread Bundt Cake with Brown Butter Glaze

Ingredients
- 3 cups unbleached all-purpose flour increase to 3 ¼ cups for high altitude, see notes for guten-free
- 2 teaspoons baking soda decrease to 1 ½ teaspoons high altitude
- 1-2 teaspoons cinnamon optional
- 1 teaspoon kosher salt
- 2 cups granuulated sugar I use all natural cane sugar(reduce to 1 ½ cups high altitude)
- 3 large eggs room temperature, if you forgot (submerge in warm, not hot water for 5-7 minutes)
- 1 cup vegetable oil I like avocado or melted coconut oil, but any vegetable oil will work
- 4-6 medium ripe bananas mashed
- 1 cup creme fraiche or substitute with sour cream or plain Greek yogurt
- 2-3 teaspoons vanilla extract try my bourbon vanilla extract too
- Garnish with desired glaze (see notes) and chopped walnuts
Optional Add-ins
- ⅔ cup chopped walnuts tossed in 1 tablespoon of flour mixture
- ⅔ cup semi-sweet chocolate chips tossed in 1 tablespoon of flour mixture
Instructions
- Preheat oven to 325° F (165° C) or 350° F (175° C) for high altitude, unless using a dark pan. Spray a 10-12 cup bundt pan with baking release spray (my favorite), or brush with soft butter, then dust with flour.
- In a medium bowl, whisk together the flour, baking soda, cinnamon and salt, set aside.
- Beat the eggs and the sugar in a stand mixer fitted with a paddle attachment on medium-high speed for about 6-8 minutes – on the longer side if using natural cane sugar.
- Slowly drizzle in oil, it should take 1-2 minutes to drizzle in while the mixer is on medium.
- Add mashed bananas, creme fraiche (or sour cream or yogurt) and vanilla extract.
- Slowly fold your flour mixture into the wet batter (if using walnuts or chocolate chips, be sure to toss in a tablespoon of flour before folding into the batter).
- Pour the batter into the prepared bundt pan and tap a few times on a cutting board to get out any air bubbles.
- Bake for about 65-75 minutes or until a skewer or cake tester inserted in the center comes out clean or with a few moist crumbs.
- If desired, glaze cake with glaze one or glaze two and sprinkle with chopped walnuts.

- ½ cup heavy whipping cream
- 1 cup granulated sugar
- 1 ½ -2 teaspoons vanilla extract
Place your butter in a small saucepan, over medium-low heat melt butter; it will snap, sizzle and pop, swirl it around every once in a while, when it starts foaming up let it sit on low until foaming subsides, by then your butter should have a nutty aroma and a caramel color. In a small mixing bowl, measure powdered sugar and pour in browned butter and water, add a pinch of salt and whisk until smooth and pipeable or spreadable. If it seizes up on you or is too thick, add a teaspoon of water at a time until thin enough to pipe or spread. Whisking well to combine.
Drizzle on your baked goods with a spoon, or pour your glaze into a piping bag (baggies work great too) for piping. Simply snip the end (or corner from a baggie). Be sure to snip a tiny bit initially and see how the stream comes out, if too tight, snip a bit more off until you get the desired amount. How to make Vanilla Butter Sauce – Glaze #2 In a small heavy-bottomed sauce pan, over medium-low heat, melt the butter, sugar, heavy whipping cream, and vanilla.
Stir constantly until the sugar is dissolved and has a syrup consistency. It should coat the back of a wooden spoon.
Sauce is best served warm, it will thicken as it cools, so if you need it thicker, allow it to cool until desired consistency. High Altitude Banana Bread Bundt Cake I bake at 5280 feet above sea level and have tested this cake at high altitude and have had it tested sea level too. Turns out beautifully every time.
