The countdown is ON, friends! Costumes to finish. Pumpkins to carve. And someone has to figure out how many fun-size candy bars is “too many” (asking for a friend). Dinner shouldn’t be the scary part.
So this week’s Countdown to Halloween Meal Plan keeps it simple. Crispy baked chicken tacos on a sheet pan. Spaghetti baked up like a pie. And a Cajun shrimp boil that’s one pan and done, so you can get out the door on Halloween night.
I also tucked in a big pot of minestrone for chilly lunches and a gooey caramel apple dump cake. Every countdown needs a treat! No tricks, just a week that runs a little smoother.

This Week’s Kitchen Rhythm
Your Smart Cooky Club plan for the week
- Start strong: Baked Chicken Tacos
Crispy, cheesy, and on the table in about 30 minutes. Sheet-pan taco night is the perfect way to kick off the countdown. - Prep-ahead favorite: Baked Spaghetti Pie
Assemble it a day early, then just pop it in the oven. Spaghetti in pie form is basically a magic trick the kids will love. - Marinate & grill: Carne Asada
Stir up the citrusy marinade in the morning, then grill it in minutes when you get home. Bonus: the leftovers make the best burritos and nachos. - Halloween night win: Cajun Sheet Pan Shrimp Boil
One pan, big flavor, almost no dishes. Get it in the oven and get out the door for trick-or-treating. - Flexible extras: Minestrone Soup + Caramel Apple Dump Cake
A big pot of soup for lunch or dinner, plus a fall dessert worth every spooky-sweet bite.
A simple plan to help your week run a little smoother.
5 Steps to a Stress-Free Week of Meals
Start by printing your grocery list, then let’s make this week feel a whole lot easier.
Remember the suggested sides are not included on the grocery list, so be sure to add those ingredients.
- Plan Your Week, Your Way: There’s no right or wrong order here. Cook the meals as listed or mix and match your favorites.
- Access Your Recipes Anytime: Print the recipe cards or pull them up on your device. Everything you need is right at your fingertips.
- Shop Smart: Check your fridge and pantry first. Cross off what you already have and add anything else you need.
- Make It Yours: Use the tips below to adjust for dietary needs, preferences, or portion sizes.
- Enjoy the Process: This is about simplifying your week and gathering around the table with good food and the people you love.
You’re building a kitchen rhythm that serves your home well, one simple meal at a time.
Dinner 1: Baked Chicken Tacos
Prep-Ahead Tips: Shred your chicken (or grab a rotisserie chicken, no judgment here!) and mix up the filling with the green chile enchilada sauce a day or two ahead. When dinnertime rolls around, all that’s left is crisping the tortillas, filling, and baking.
DIETARY TWEAKS
- Gluten-Free: Corn tortillas keep these naturally gluten-free. Just double-check your enchilada sauce label to be safe.
- Dairy-Free: Swap in your favorite plant-based shredded cheese, or skip the cheese and pile on extra guacamole and salsa.
- Low-Carb: Skip the tortillas and serve the filling as a taco bowl over shredded lettuce or cauliflower rice, or use low-carb, high-fiber tortillas.
Cooking for Two? Use the slider on the recipe card to cut it in half, or make the full batch of filling and freeze the extra in smaller portions for a quick dinner for two another night. This is what I usually do.
Got leftover tacos? Layer them in a baking dish, pour enchilada sauce over the top, add cheese, and bake for a cheesy, enchilada-style casserole. Leftovers, but make it fun!
Suggested Sides: Taco night isn’t complete without Spanish Mexican Rice or Cilantro Lime Rice. Add a bowl of Easy Blender Salsa, Homemade Guacamole, and chips, or go all out with warm White Queso Dip.
Dinner 2: Baked Spaghetti Pie
Prep-Ahead Tips: This one is a make-ahead dream! Assemble the whole pie in a 9 to 10-inch springform pan the day before, cover tightly, and refrigerate. Let it sit on the counter while the oven preheats, then bake as directed. (If your pan isn’t leakproof, wrap the outside in foil and set it on a sheet pan.) You can also freeze it unbaked for up to 3 months. Bake from frozen, covered, for about 60 minutes, then uncover and bake another 20 to 30 minutes.
Pro tip: Let it rest 10 to 15 minutes before slicing for those picture-perfect wedges.
DIETARY TWEAKS
- Gluten-Free: Swap in your favorite gluten-free spaghetti. Everything else stays the same, and it holds together just as well.
- Dairy-Free: Use plant-based cheeses (including a dairy-free cream cheese for that creamy middle layer) and sauté in oil instead of butter.
- Low-Carb: Try roasted spaghetti squash instead of pasta, drained well, so the pie still slices nicely. Or grab a box of low-carb spaghetti and boil according to package directions.
Cooking for Two? This pie serves 8 to 10, so bake the whole thing and freeze individual slices, each wrapped in plastic and foil. Future you will be so grateful for a ready-made lunch or dinner!
Suggested Sides: Cheesy Garlic Bread is a must here. Round it out with a crisp Wedge Salad or an Italian Chopped Salad.
Dinner 3: Carne Asada
Prep-Ahead Tips: The marinade does the heavy lifting here. The steak needs at least 8 hours (up to 24), but my sweet spot is 8 to 10. Mix it in the morning before you head out, and it’ll be ready to grill when you get home.
DIETARY TWEAKS
- Gluten-Free: This marinade skips the soy sauce, so it’s already gluten-free and soy-free. Serve it in corn tortillas.
- Dairy-Free: The steak itself is dairy-free. Just skip the cheese and crema toppings, or use dairy-free versions.
- Low-Carb: Carne asada is naturally low-carb. Serve it as a burrito bowl over cauliflower rice or in lettuce wraps with avocado and pico.
Cooking for Two? Use the slider on the recipe card to halve it (about 1 pound of steak), or cook the full batch and enjoy the leftovers for 4 to 5 days. Leftover carne asada is a gift: think burritos, nachos, quesadillas, or breakfast burritos with scrambled eggs.
Suggested Sides: Turn it into Carne Asada Tacos and serve with Street Corn Rice and Chipotle Corn Salsa. For something fresh, a Healthy Mexican Chopped Salad is the perfect partner.
Dinner 4: Cajun Sheet Pan Shrimp Boil
Prep-Ahead Tips: Make Halloween night a breeze! Earlier in the day, slice the sausage, chop the red onion into big chunks, break the corn into pieces, and stir together the Cajun spice butter. If your shrimp are frozen, thaw them in the fridge and pat them dry. At dinnertime, just parboil the potatoes and corn, toss everything on the pan, and bake. One pan, done, and you’re out the door with the trick-or-treaters. 👻
DIETARY TWEAKS
- Gluten-Free: This one is naturally gluten-free. Just double-check the labels on your sausage and seasonings.
- Dairy-Free: Swap the butter for olive oil or a plant-based butter in the spice mixture.
- Low-Carb: Skip the potatoes and corn and load up on low-carb veggies like cauliflower florets, zucchini, and bell peppers.
Cooking for Two? Use the slider on the recipe card to cut the recipe in half; it fits perfectly on one sheet pan. Leftovers keep up to 3 days (this one doesn’t freeze well). Toss them with pasta and a splash of cream, or spoon them over rice for an easy lunch.
Suggested Sides: You’ll want something to soak up all that Cajun butter, so grab a loaf of Homemade French Bread. A crunchy Apple Coleslaw or Southern Green Beans make it a full-on feast.
Lunch or Dinner: Minestrone Soup
Prep-Ahead Tips: This classic simmers low and slow for about 3 hours, so make it on the weekend and enjoy it all week long. Chop your veggies ahead of time (a mandoline or veggie chopper makes it quick), and know you can pause the simmer and pick it back up later if life happens. Cook the pasta separately and add it to each bowl as you serve so it doesn’t soak up all the broth.
DIETARY TWEAKS
- Gluten-Free: Use your favorite short gluten-free pasta, cook it separately, and add it to each bowl.
- Dairy-Free: Skip the Parmesan rind and cheese garnish, and use vegetable broth to make it vegan.
- Low-Carb: Skip the pasta and potatoes, and add extra zucchini, green beans, or cabbage instead.
Cooking for Two? Make the full pot and freeze single portions in small containers. A warm bowl of soup on a chilly fall day is only a quick reheat away.
Suggested Sides: This soup was made for dunking, so serve it with a pan of warm Focaccia Bread or Red Lobster Cheddar Biscuits. Make it heartier with a slice of Stromboli, or add a simple green salad with Zesty Italian Dressing.
Snack or Dessert: Caramel Apple Dump Cake
Prep-Ahead Tips: With about 10 minutes of prep, this is the easiest treat on the list! Bake it up to a few days before your Halloween get-together; it keeps covered on the counter for up to 3 days, in the fridge for up to 7, or in the freezer for up to 3 months.
DIETARY TWEAKS
- Gluten-Free: Use your favorite gluten-free cake mix and double-check that your apple pie filling is gluten-free.
- Dairy-Free: Make sure your cake mix and caramels are dairy-free, and swap the butter for plant-based butter or melted coconut oil.
Cooking for Two? Divide it between two 8×8 pans: bake one now and freeze the other for a sweet surprise later.
Serving Suggestions: Serve warm with a big scoop of vanilla ice cream, a dollop of whipped cream, or an extra drizzle of Salted Caramel Bourbon Vanilla Sauce. Happy haunting and happy eating!
