Cookie Croissants or Le Crookies have been all over TikTok and other social media, and it was time I tried it! They’re delicious! A Parisian and American mashup of a pure butter croissant with gooey chocolate chip cookie dough.
Also known as cookies or le Crookie, this fun recipe was created at Boulangerie Louvard, a Parisian bakery, and became a viral hit on TikTok! Luckily, it’s easy to make our version at home.

What is a cookie croissant?
Let’s set the record straight: that TikTok-famous cookie dough croissant? It’s not a TikTok original. Nope, it all started at Maison Louvard bakery on Rue de Châteaudun. In 2022 Stéphane Louvard of Maison Louvard came up with the concept of these cookie dough croissants. It was dubbed “Croissant pur beurre garnit d’une généreuse pâte à cookie mi-cuite,” which loosely translated means a buttery croissant stuffed with generous gooey half-baked cookie dough.

It didn’t take long for fans to post all about this delicious menu item. If you check out any of the videos and photos of this tasty treat, you’ll see why it became a viral hit – they took their best croissant and stuffed it with gooey cookie dough.
Simple Ingredients for Crookies
- Croissants: Use pre-baked croissants. You can purchase them at your local bakery, grocery store bakery, or Costco.
- Cookie dough | I used a half batch of my homemade cookie dough. Try my Crumbl Cookie Recipe for the ultimate ooey-gooey center! Or purchase organic chocolate chip cookie dough! If making your own dough, you will need unsalted butter, sugar, brown sugar, eggs, vanilla extract, baking soda, kosher salt, unbleached all-purpose flour and chocolate chips of course!
- Powdered sugar | And top it all off with sweet powdered sugar.

How to Make Le Crookie
Step 1 | Preheat and prep
First, preheat the oven to 375° F (190° C) and line a baking sheet with parchment paper or a silicone baking mat. Using a serrated knife, horizontally slice the croissants in half, like you would for a sandwich.
Step 2 | Make Cookie Dough (optional)
If making your own cookie dough, make it now. Cream (mix) butter and sugars together for 3-4 minutes until light and fluffy. Add egg and mix for 1 minute. Add vanilla extract and mix to combine.
In small bowl combine flour, baking soda and salt together, then slowly add to butter and sugar mixture until just combined. Stir in chocolate chips and refrigerate dough for 10 minutes.
Step 3 | Add cookie dough
Next, flatten a couple of cookie dough balls in your hand and smash them into the bottom half of the buttery croissant. Cover it with the top half, then add smaller pieces of dough on the top and at the ends of the croissant. Set the crookie onto lined baking trays and continue with the remaining croissants and dough.
Step 3 | Bake
Place the cookie croissants in the oven and bake for 9 to 15 minutes, depending on how baked you want the cookie dough. When the tops are golden brown and the cookie dough is to your liking, remove the croissants au chocolat and cool for 5 minutes.
Adjust the baking time according to how you like your cookie dough, if softer, bake less time, if more firm, bake longer. Mine were perfectly crispy on the top, gooey inside at 11 minutes.
Step 4 | Decorate and serve
After the cookie croissants have cooled for about 5 minutes, sprinkle with powdered sugar, if desired. Serve warm and enjoy!

High Altitude Cookie Croissant
If making your cookie dough at altitudes above 3200 feet, make these simple adjustments:
- Reduce both sugars to ⅓ cup each
- Increase flour by ¼ cup
- Decrease baking soda to ½ teaspoon

- Firmer Cookie: The inside of the viral crookie is supposed to be half-baked, like my Half Baked Cookies. However, if you want a firmer cookie, spread the dough thinner on the croissant and bake for a little longer.
- Other Cookie Doughs: Make the recipe with your favorite homemade or store-bought cookie dough, like peanut butter, triple chocolate, my cake batter cookie dough, or snickerdoodle dough!
- Add nuts: Add a satisfying crunch by sprinkling some walnuts, pecans, sliced almonds, or macadamia in the crookies!
- Mini Crookies: Make individual crookies using mini croissants, and half the dough.
- More Topping Ideas: Try topping the croissants with extra pieces of cookie dough, sprinkles, chocolate chips, nuts, or an icing or glaze.
- Homemade Croissant: You can keep the recipe simple with store-bought croissants or make your own fresh croissants by making or purchasing croissant dough, but plan that into your timing as you will need to bake and cool the croissants prior to assembling. They would taste amazing!
Make Ahead Tips for the Viral Cookie Croissant
Crookies are great for making ahead for a special occasion or holiday, like Mother’s Day, a baby shower, or an office potluck. Just assemble the croissant cookies and store the unbaked cookie croissants in an airtight container in the fridge for up to two days or freezer up to 2 months.
Then, set the crookies on the counter as the oven preheats to 375° F (190° C). Bake for 10 to 16 minutes on a prepared baking sheet and enjoy!
Storage Tips
Due to their half-baked nature – leftover le crookies can be stored in an airtight container in the fridge for up to five days. If you have baked the inner cookies completely, they may be stored at room temperature for 2 days.
Reheating in the Oven
Reheat the croissant cookies in a preheated oven at 350°F (175° C) for just five minutes, or until the cookie dough becomes soft again. Loosely cover with aluminum foil to prevent the tops from becoming too brown or overbaked.
Air Fryer: You can also reheat the crookies in the air fryer at 320°F for a few minutes or in the microwave for 15 to 30 seconds.

- 4 large Croissants pre-baked, or baked and cooled
Half Batch Chocolate Chip Cookie Dough
- 1 stick salted butter room temperature, ½ cup
- ¼ cup granulated sugar ⅓ cup for high altitude
- ½ cup light brown sugar packed (⅓ cup for high altitude)
- 1 large egg room temperature
- ½ teaspoon vanilla extract
- 1 cup unbleached all-purpose flour 1 ¼ cups for high altitude
- ½ teaspoon baking soda
- ½ teaspoon kosher salt ¾ teaspoon if using unsalted butter
- Powdered Sugar for sifting
- 1 cup semi-sweet chocolate chips
Or instead of making your own cookie dough
- 1 package storebought chocolate chip cookie dough I tested using storebought Organic chocolate chip cookie dough
Instructions
- Preheat the oven to 375° F (190° C). Line a baking sheet with parchment paper.
If making cookie dough (make it now)
- Cream (mix) butter and sugars together for 3-4 minutes until light and fluffy. Add egg and mix for 1 minute. Add vanilla extract and mix to combine. In small bowl combine flour, baking soda and salt together, then slowly add to butter and sugar mixture until just combined. Stir in chocolate chips and refrigerate dough for 10 minutes.
- Using a serrated knife, slice pre-baked croissants (4) in half horizontally, splitting as if to make a sandwich.
- Smash two cookie dough balls in your hand (about 2 TBL each), then spread onto croissant with your fingers.
- Place top of croissant on top and divide one dough ball in half, placing on top of croissant. About a medium cookie scoop worth.
- Place on the baking sheet. Repeat this with the rest of the croissants and cookie dough.
- Bake in the oven for 9-15 minutes until the tops of the croissants and cookies are browned and the center cookie dough is still gooey. For gooier crookies bake less time, for more firm cookies bake longer.
- When the croissants are done, let them cool for about 5 minutes, then sprinkle with some powdered sugar to finish.
