Hello Foodies!
Thanks for hanging out with me. I know you received quite a few emails from me last week, and I am sensitive to that. I have been doing some testing to gauge interest in producing a guide for Fast Weeknight Meals using QuickFix Proteins. And there is definite interest!
Whether our boys are home or when we’re empty nesting, I want to put a healthy meal on the table quickly, and I imagine you do, too! So stay tuned. I’m excited about this project, and you will be the first to know about it!

- Banana Chocolate Chunk Muffins! If you don’t already have some browning bananas, stop and go and buy some so you have some for this recipe! These are bakery-style, high-domed, tender crumb muffins with great banana flavor and little puddles of dark chocolate — swooning!

In Real Life
Summer is in full swing, isn’t it? I love to sit outside on our front porch for my morning quiet time in the summer, but some days, I can “feel” the heat as I walk out the door. But I sure do love the quiet of the morning (see a picture below), hearing the birds, the hum of the hummingbirds in the garden and the dawn.
I see Back-to-School stuff in stores, and it feels like it’s the middle of summer. Our youngest will head back to college in a couple of weeks — boo!
But the sultry days of summer will linger here in Colorado, usually well into September and sometimes October. So this girl, who is ready for fall after the 4th of July, is trying to brace herself for another couple of months of heat.

What I’m Reading
Beth Moore’s “All My Knotted Up Life” — it’s not what I expected, with some very hard realities that have shaped her into the godly woman she is today. While not always easy to read, I enjoy her style of writing and I finished it feeling encouraged! ⭐️ ⭐️ ⭐️ ⭐️ ⭐️
Finding Dorothy ⭐️ ⭐️ ⭐️ ⭐️ ⭐️. It is a fascinating historical novel about how the writing of The Wizard of Oz came about. It’s told from the perspective of L. Frank Baum’s wife, Maud. The story bounces back and forth between her consulting on the set of The Wizard of Oz (when she is in her 80s) and her life with Frank in the early 1900s. The story was birthed out of their struggles, I think you will like it too!
Meet Me At the Starlight: I am about halfway through this one. I love Rachel Hauk’s books! They are clean, honest, and real. This one is about a small town in Florida as they fight to save their beloved historical skating rink. It is a little bit love story, a little history, and a whole lot of fun.
