Good morning, friends!
Wow, what a week of crazy weather! So much of the nation has been in a deep freeze, and some with a lot of snow. I pray you have been safe and warm!
We had sub-zero temps over the weekend through Monday, but only a dusting of snow. Wow, it was cold! We enjoyed laying low, and I didn’t even walk! I have drawn the line at -11, okay, maybe 0! Haha! Thank God for our cozy fireplace; the heater struggled to keep up, but our wood stove kept the main floor toasty!
It gave me plenty of time to shoot a couple of new recipes for you! Whoop! When it’s cold outside, I’m all about the Slow Cooker – how about you?
All in all, it was a great weekend!

New on the blog this week | Where’s the Beef?
I didn’t necessarily plan it this way, but all three recipes use beef, probably because I had a lot of beef in the freezer, and I’m doing my best to work through what I already have — hence, we have three beef-a-licious recipes!
- Starting with this incredible Sous Vide London Broil! A mostly hands-off recipe, that will yield the most tender, juicy, and flavor-infused steak! You do of course need a sous vide machine and I wish I bought one years ago!

- And how about a fall-apart tender Crockpot Brisket?!? With a few quick prep steps, this will be in the crockpot in no time, and then shazaam dinner is on the table! In a rich, onion and red wine gravy — succulent and tender. Serve on mashed potatoes or as a French dip on sandwich rolls.
- And finally, how about these juicy Crock Pot Steak Bites? Easy enough for busy weeknights, delicious enough for company, or as an appetizer for game day!

A week in my life…
As mentioned, with the cold snap, we didn’t do much this weekend except for a lot of cooking and leisurely mornings by the fire! I edited photos and watched movies; I even dozed for a few minutes! (I’m not a napper, so that’s something!)
I posted these photos on Instagram, and many folks asked me for the eggnog latte recipe! We have a touch of eggnog left after the holidays.
On Wednesday, I went to dinner with our dear widowed neighbor – we adopted her! She’s 86 years young, and I want to be like her (and my mom) when I “grow up.” She’s involved in Bridge and widow groups; she’s often on the go, and I think it keeps her young!

Weekly Inspiration | God is your help
From my favorite book from 2023, I have probably gifted this to 20 or more people!
“Breathe Deep and Know: Your help comes from the Lord, the One who made you and loves you more than all of heaven and earth.
The Creator of the universe — the Giver of life and the Maker of the heavens and all the earth — is the One who is with you, by your side, ready to help you. Is anything too big for Him, too difficult for Him to do? If His breath can create life, if a single word from His mouth can birth stars and planets, surely He is able to help you, no matter what you’re facing.
Inhale: My help comes from you,
Exhale: Maker of heaven and earth.”
