Most mornings, my mom would wake me up with that greeting, always starting my day off with a smile, but then again, I’m a morning person. Are you?
Even with an extra day this month (hello, leap year!), February has flown by, and March will be here next Friday!

A week in my life…
I joined my husband at an annual trade show he attends at The Broadmoor this week. It’s been ages since I’ve been (last time was 2020—ugh!). Such a gorgeous resort nestled against the foothills in Colorado Springs.
As mentioned, I’ve had a very productive week since my hubby has been crazy busy at the trade show, customer meetings, and such. I came laser-focused with a blank notebook to fill with ideas for blog posts for the coming months. And while I didn’t get as much done as I hoped, I am off to a great start.
Table for one
I posted this question on one of my Facebook and Instagram stories and asked, “Are you comfortable eating in a restaurant alone?“
Table for one, please.
Years ago, before I was married, I traveled a lot for work, and often, I was alone — as an introvert, I would grab a not-so-great-for-you meal and eat it in my room.
I remember the day I challenged myself to eat out because even introverts enjoy a good meal at a table with real silverware. I drove from Jamestown, VA, to Washington, DC, and stopped at a popular roadside diner. I grabbed my book and challenged myself to slow down and enjoy a meal at a table; it was liberating! And I haven’t looked back.
I’ve enjoyed many beautiful meals alone, getting to know my waiters and waitresses, dining with strangers (common in many other countries), people-watching, and simply savoring my food.
Fun Fact About Me
I do not like mushrooms! It’s a texture thing! The funny thing is, I don’t mind their flavor and know they are so GOOD for you! So I still put them into recipes, like this Chicken and Rice Casserole or these stuffed mushrooms (I ate the filling and gave my mushrooms to Mr. Fresh Cooky – he loves them!)
I am also very stealthy (my inner 3-year-old coming out) and can easily discreetly stash mushrooms on my plate and slide them onto my hubby’s plate when people aren’t looking!
So if you ever have me over for a meal, don’t shy away from using mushrooms! 😉
