Using a fork, poke holes on each side of the sweet potatoes. (This prevents them from bursting out of their skin while being cooked).
Place sweet potatoes in air fryer basket, making sure they are not touching. Air fry at 390F degrees for 35 minutes, do not preheat the air fryer, this will help crisp the skins.
Carefully remove them from the air fryer basket and serve with your favorite toppings. See Notes for topping and storage ideas.
