Linzer Heart Cookies

Valentine Raspberry Cookies are easier than you think!

While living in Germany, I learned and adapted this recipe for Linzer Heart Cookies to work with American ingredients.

Ingredients

How to Linzer Raspberry Cookies

In a medium mixing bowl, whisk together the all-purpose flour, the almond flour, and the salt.

Beat the wet ingredients

Cream butter, sugar (½ cup), and cinnamon on high until light and fluffy. Then add the egg yolk and almond extract.

Combine Bowls

Slowly add the flour mixture, about ⅓ cup to the butter mixture and mix on low until it is well combined.

Chill the Dough

Divide the Dough in half and wrap each in plastic wrap to chill in the fridge. - Then roll on half of the dough.

Cut the Dough

Cut the bottoms of the heart cookies. Then the tops with the rest of the dough. And be sure to cut the center hearts too!

Bake, cool and assemble the cookies! Dust the tops, add the jam, and put them together.
