Chocolate Raspberry



with Raspberry Frosting

These raspberry chocolate cupcakes are perfect for Valentine’s Day, Easter, Mother’s Day, Bridal and baby showers — oh goodness, anytime at all!


Mix the Dry Ingredients

Combine the flour, cocoa powder, baking powder, and salt. Whisk to combine.

Add eggs and sour cream and mix, then add in the dry mixture. Mix well.

Bake the Cupcakes

Fill each liner to 2/3 full and place the pan in the oven to bake.

Make the Ganache

Add cream and chocolate chips to a bowl and microwave to melt in 30 second increments until smooth and creamy.

Once they are cooled, remove the center top and add in the ganache filling.

Make the frosting

Add freeze dried raspberries to a food processor. Pulse to a fine powder.

Gradually addd the powdered sugar to butter icing, then the raspberry powder and preserves. Mix until light and fluffy.

Add toppings and serve!
