This vegetarian tater tot breakfast casserole takes just 20 minutes to assemble but also feeds a crowd and makes meal prep a breeze.
Prep and Saute Veggies
Add the diced onions, peppers, and zucchini, sauteing until they soften and brown slightly, stirring occasionally.
After adding mushrooms, veggie mixture should be soft and slightly golden in color.
Lay the TOTS!
Add tater tots to prepared casserole dish in even layer.
The Egg Mixture
Beat eggs until smooth, adding kosher salt, smoked paprika, cayenne pepper, and black pepper to taste.
Pour in the milk and cream, whisking until the ingredients are smooth. Then slowly stir in the veggies.
Stir in the cheese, and pour over the tots.
