Muffin tin apple pies
Making mini apple pies in your muffin time is time-saving and perfect for smaller gatherings or portion control!
A quick homemade apple filling, a drizzle of caramel, and a buttery streusel topping.
Use a pastry blender or your hands to mix butter, cinnamon, flour, and light brown sugar.
Prep the apples
Dice the apples into small pieces similar in size. Then add the apples and ingredients for filling to a pan.
Melt the butter, add small pieces of apples, brown sugar, and spices to the butter and cook for about three minutes.
Sugar Cookie Crust
Beat the butter and brown sugar, add eggs and vanilla.
Slowly add in the dry ingredients - flour and salt - and mix.
Assemble Mini apple Pies
Spoon two tablespoons of the crust batter into each cupcake tin cup and press with fingers or the back of a spoon to form the crust, then add two heaping teaspoons of the apple pie filling mixture.
Top Muffin Tin Apple Pies with the streusel topping and pop into the oven.
Top, serve & enjoy!
Finally, lightly drizzle a couple of teaspoons of caramel sauce on the apples and sprinkle the tops with the buttery crumble mixture.
