Prepare the Ingredients

Preheat the oven and zest the lemon. Then juice the lemon in another bowl.

Making the Batter

In a medium bowl, whisk the flour, baking soda, and kosher salt and set aside. Then cream the butter and sugar together.

Add the eggs and beat until combined. Then add in the lemon zest, juice and vanilla.

Mix in the bowl of flour mixture until combined.

Form cookie dough balls about 1½ inches in diameter. Roll each dough ball in a shallow bowl of powdered sugar until thoroughly coated.

Bake, cool and package them up to share at the next Christmas Cookie Swap!
